The Story
Thanks to Australia’s excellent 2018 vintage (one of the best in years), Toby had his pick of perfectly ripened grapes, which he selected from some of his favorite vineyard sites. Back in the winery, he treated the Cabernet to six months’ aging in fine French and American oak barrels. This process imparted complex, toasty spice notes to the wine’s velvety plum and black cherry flavors.
